Chocolate Raspberry Truffles and Desserts for a Cure Event



My daughter and two friends participated in Desserts for a Cure. They were required to create three different desserts for culinary judging and selling to the public. They sold 70 plates at $1.00 a plate and took second place in the judging. So it was a great success with about 15 teams participating and competing for a good cause. Madison's contribution included a chocolate raspberry truffle coated in confectioner's sugar.


Their dessert theme was A Fare to Remember using primarily chocolate, white chocolate, and raspberries for the delectable recipes. Along with the chocolate raspberry truffles, they offered a white chocolate, raspberry cheesecake with a chocolate cookie crust along with a flour-less chocolate cake topped with white chocolate mousse and raspberries in puree. It was just fabulous watching these three culinary girls in action. Their food presentation and skills really shined!


 It was truly a sweet event!





Chocolate Raspberry Truffles

1 (15 oz.) can sweetened condensed milk
2 (12 oz.) bag Ghirardelli semi-sweet chocolate chips
2 Tbls. butter 
2 Tbls. seedless raspberry jam
1 Tbls. raspberry extract
1/2 cup confectioner's sugar (for coating)

1. In microwave safe bowl, heat milk, butter, jam, and extract for 3 minutes on high heat. 
2. Pour in chocolate chips and stir until completely melted. 
3. Cover with plastic wrap and freeze for 30 minutes. 
4. Form balls using teaspoon and roll in confectioner's sugar. 
5. Let set in refrigerator until ready to serve.
