Cranberry Salad




2 cups fresh cranberries, ground in blender
3 cups mini marshmallows
3/4 cup sugar
2 cups diced Fuji apples--skins left on
1/2 cup walnuts, crushed
1/4 teaspoon salt
1 cup whipped cream

Fold all ingredients and chill for several hours or overnight.

This is a wonderful salad with the flavors and colors of the holidays. Serve on a green lettuce leaf to really make the dish pop with Christmas hues. I love the variety of textures and the juxtaposition of tart and sweet.
