Guacamole Vegetable Dip

As a family, we are including more whole, nutritious foods to our diet. Instead of traditionally tortilla chips and guacamole, we exchanged processed corn chips with cut vegetables such as red pepper, sugar snap peas, and cucumber strips. This Guacamole is on of the quickest and tastiest recipes I have created.

2 ripe avocados
2 to 3 Tbls. fresh salsa
1 squeeze of fresh lime
1 tsp. minced jalepeno pepper (optional)
1 tsp. extra virgin olive oil

1. Seed and peel avocado and place in medium bowl.
2. Add salsa, lime, pepper, and oil. Stir to combine.
3. Serve with fresh vegetables.
