Fruit Pizza

Without a white crust and sugar laden topping, this is an easy, refreshing little, healthy treat.

8 Watermelon wedges, cut 1/4 inch thick
1/4 cup goat cheese (optional)
2 Tbls. honey
diced mango
fresh pineapple chunks
mandarin oranges
unsweetened coconut flakes

1. Spread one-half tablespoon of goat cheese over each watermelon wedge.
2. Drizzle honey over cheese.
3. Assemble fruit over cheese and sprinkle with coconut.
