Coconut Seared Plantains are easy and tasty with the complimentary flavors of almond butter, cream, and coconut oil.
2 ripe plantains cut into 1" pieces
1 Tbls. coconut oil
1/2 cup almond butter
1/4 cup crumbled feta cheese
3 Tbls. Mexican cream
2 Tbls. powdered peanut butter (optional)
1. In medium skillet, heat oil over medium heat.
2. Add plantains and cook for 2 minutes per side.
3. Smear tablespoon full of almond butter on plate.
4. Add plantains and sprinkle with feta cheese, cream, and peanut butter powder.
