Catalina Salad



1 head Romaine lettuce, washed, dried
1 lb. ground beef, browned
1 bag Doritos brand cheese flavored chips
1 cup cheddar cheese, grated
8 oz. Catalina Dressing
1 (15 oz.) can kidney beans, rinsed and drained
1 bunch green onions, chopped fine
2-3 tomatoes, cut into chunks

1. If eating immediately, combine all ingredients in a large bowl and toss. Serve pronto.
2.  If not, combine all ingredients except Dorito chips and dressing and add them to individual salad bowls.

This dish is a little bit sweet and savory. It is quick, nutritious, and delicious. It is a new and tasty twist on the traditional taco salad. 

My mom used to make this salad for her Ladybug club. Now I make it for my book club. It has become a classic luncheon dish in our family.  

For camping or picnicking, buy individual size Dorito Bags and fill them with the salad and dressing. Use disposable forks and napkins and the clean-up will be a snap. 

For busy families this is also a great idea to send homemade dinner with your children who are off to games.
