Banana Bread

3 overripe bananas, peeled and mashed
3/4 cup brown sugar
1 egg
4 tablespoons butter, softened
1 1/2 cups flour
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt

Preheat oven to 325 degrees. Grease and flour a loaf pan. In a large bowl, combine the mashed bananas, sugar, egg, butter, and vanilla. Beat until mixed well. In separate bowl, whisk flour, baking soda, and salt. Stir in flour mixture with banana mixture just until blended. Pour into loaf pan. Bake for 1 hour or until toothpick comes out clean. Allow bread to cook in pan another 10 minutes. Turn onto rack.
