Bruschetta



Bruschetta is the original garlic bread and makes for a terrific appetizer

1 baguette, sliced 1 inch thick
5 tablespoons extra virgin olive oil
2 cups cherry tomatoes, halved
1/2 cup fresh basil, chopped
kosher salt and fresh ground pepper to taste
Parmesan cheese, finely shredded for garnish

1. In bowl, combine, tomatoes, 4 tablespoons olive oil, basil, garlic, and salt and pepper.
2. In hot skillet with 1 tablespoon olive oil, toast each side of baguette.
3. Top with 2 tablespoons tomato mixture and garnish with Parmesan cheese.

Serves 12
