Twice Baked Potatoes




Twice Baked Potatoes are really just like a loaded potato from a potato bar. Thus, I believe they are hardy in and of themselves to be a meal. Just pair them with a green salad and dinner is served. After my husband delved into one of these spuds he turned to me and said, "that was the best potato you have ever made!" Spoken like a true meat and potato lover.

8 medium potatoes
1/2 sour cream
1/4 to 1/2 cup milk
2 tablespoons butter
1 tablespoon cream
1/4 cup green onions, chopped
1 cup cheddar cheese, shredded
4 pieces of bacon, cooked crisp and crumbled

1. In 450 degree oven, cook scrubbed potatoes wrapped in tin foil on cookie sheet for one hour or until potatoes are soft.
2. Let cool to warm then cut in half. Use spoon to scoop out inside of potato.
3. Reserve both sides of skin. Place potato inside a bowl.
4. Add sour cream, milk, butter, and cream and mash until smooth. (Do not over mash potatoes or they may become gooey.)
5. Fold in cheddar cheese, green onion, and bacon. Scoop potato mixture back into potato skins.
6. Place filled potato skins on cookie sheet and bake in 350 degree oven for 15 to 20 minutes. Serve warm.
