Touchdown Taco Soup


1 onion, chopped
1 tbls. canola oil
1 lb. lean hamburger
2 (15 oz.) Mexican stewed tomatoes
1 (15 oz.) diced tomatoes with chipotle 
1 (15 oz.) can black beans
1 (15 oz.) can kidney beans
1 (15 oz.) can tomato sauce
1 ( 1.5 oz.) packet taco seasoning
3 cup water

1. In skillet, saute onion in oil until tender.
2. Add hamburger and brown.
3. Transfer hamburger and onion to large stock pot. 
4. Add canned tomatoes, beans, tomato sauce, taco seasoning, and water. Stir.
5. Simmer for 15 minutes and serve with sour cream, avocado slices, shredded cheese, and cilantro sprigs.

This is one of our family's favorite game day meals, because it is hearty, tasty, quick, and feeds a crowd.
