Roasted Potatoes


1 tablespoon olive oil
1 tablespoon butter
3 large baking potatoes, skins on, scrubbed and cut into 1 inch cubes
1/8 cup red onion, chopped
1/8 cup green pepper, chopped fine
1 teaspoon crushed garlic
1/2 teaspoon seasoned salt
1/2 teaspoon sea salt
1/2 teaspoon ground pepper
1 tablespoon dried parsley flakes

1. Heat oil and butter in large non-stick skillet over medium-high heat.
2. Add onions, green peppers, and garlic and saute until soft about 3 minutes.
3. In a bowl toss potatoes with seasoned salt, sea salt, black pepper, and parsley flakes. Stir to coat potatoes.
4. Add potatoes to skillet and turn heat to medium. Cover and cook 5 minutes.
5. Un-cover potatoes and cook for an additional 15 to 20 minutes or until potatoes are tender.

This side dish is perfect for breakfast, lunch or dinner. Savory and yummy with a lightly crispy skin and soft potatoes. I could eat these as the main dish!
