Bolognese Rigatoni


1 lb. lean ground hamburger
2 tablespoons olive oil
3/4 cup onion, diced
1/2 cup green bell pepper, diced
1 carrot, peeled and shredded
42 ounces canned crushed tomatoes
1/2 cup apple juice
2 teaspoons dried oregano
2 teaspoons dried basil
1 teaspoon dried thyme
1 teaspoon garlic powder
1 bay leaf
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
10 ounces rigatoni pasta, cooked tender (about 9 minutes)
1/2 cup fresh grated Parmesan cheese

1. In medium skillet, brown hamburger, remove from pan and set aside. 
2. In same skillet heat olive oil. 
3. Add onion, pepper, and carrot. Cook until tender.
4. Stir in crushed tomatoes, apple juice, oregano, basil, thyme, garlic powder, bay leaf, salt and pepper.
5. Bring to boil, then simmer for 30 minutes.
6. Serve over cooked rigatoni pasta. 
7. Sprinkle with Parmesan cheese before serving.

What is it about pasta that grown-ups and kids both love? Maybe its the fun pasta shapes and textures or maybe it is the fun and varied sauces and Italian cheeses that makes pasta dishes so good. Bolognese Rigatoni is definitely one of my favorite pasta and sauce combinations.
