Carrot Bread

2 cups flour
1 1/4 cups sugar
1/2 cups raisins
1 apple, peeled and diced
3 eggs
1 cup canola oil
2 cups carrots, shredded
2 teaspoons baking soda
2 teaspoons cinnamon
2 teaspoons vanilla extract
1/2 teaspoon salt

1. Preheat oven to 350 degrees. 
2. In large bowl, sift together flour, sugar, baking soda, cinnamon, and salt. 
3. Stir in carrots, raisins, and apple. 
4. In separate bowl, beat eggs, oil, and vanilla. 
5. Combine carrot mixture with flour mixture just until moistened. 
6. Spoon batter into greased muffin or mini loaf tins. 
7. Bake for 20 minutes or until toothpick comes out clean.
