Pasta Raphael

This dish has a wonderful authentic tangy, Italian flavor. I was not sure my children would particularly dig this dish, but they surprised me and it received rave reviews! 

2 (6 oz.) jars marinated artichoke hearts in oil (reserve oil)
1 cup onion, chopped fine
1/4 cup olive oil
1/4 cup Parmesan cheese, grated
1/4 cup fresh parsley, chopped
1 (32 oz.) can tomatoes
2 tablespoons garlic, minced
1/2 teaspoon, dried oregano
1 teaspoon black pepper
1/2 teaspoon salt
1 pound spaghetti, cooked tender

1. Drain artichoke hearts, reserving the oil.  
2. Heat the olive oil and artichoke marinade in a large skillet. 
3. Add onions, garlic, oregano, basil, black pepper, salt and reserved artichoke marinade. 
4. Saute over medium-low heat until the onions and garlic are tender, about 10 minutes. 
5. Add tomatoes and simmer for 30 minutes. Add artichoke hearts, Parmesan cheese, parsley. Stir and simmer another 5 minutes. 
6. Toss with 1 pound spaghetti cooked tender and serve. 

This dish has a really authentic Italian flavor. I was not sure my children would particularly dig this dish, but they surprised me and it got raving reviews! Could not believe it. Not because it isn't really delicious, but because it's kinda sophisticated with a tangy flavor like a vinaigrette dressing.
