Creamy Herb Chicken Fettuccini
4 chicken breasts, cut into 1 inch strips
3 tablespoons olive oil
3 tablespoons butter
1 cup button mushrooms, sliced
1 cup onions, chopped fine
2 cups heavy whipping cream
2 tablespoons Lipton Savory Herb and Garlic dry soup mix
2 teaspoons cornstarch
1/2 cup frozen peas
1 lb. fettuccini, cooked tender
Chicken:
1. Heat 2 tablespoons of oil and 2 tablespoons of butter in skillet until hot. Brown chicken on each side until golden.
2. Place chicken in oven proof dish with 1 tablespoon of butter. Cook uncovered in 350 oven for 13 to 14 minutes or until no longer pink. DO NOT WASH SKILLET.
Sauce:
1. Add onions, mushrooms, and 1 tablespoon oil to hot skillet. Cook until soft about 3 minutes.
2. In small bowl, combine cream, cornstarch and dry soup mix. Add to mushrooms and onions in skillet. Heat until bubbling.
3.Thaw peas by rinsing with hot water. Strain well. Add to cream mixture and cook for 1 minute to heat peas through.
4. Remove chicken from oven and serve by spooning sauce over chicken and fettuccini. Garnish with chopped parsley.
Creamy Herb Chicken Fettuccini is so good it beats restaurant Italian! This is definitely one of our favorite family dishes!

Disney's Pixar Up House Interior
The framed pictures along the stair well were precious!
One last merit badge. I know the feeling...My oldest son has just his Eagle Scout Project to finish!
Everyone needs an ADVENTURE BOOK! I have started one since my 40th Birthday. I have been amazed at how many dreams and goals of mine have actually come TRUE! I'm experiencing a whirl wind.
A place to stop, talk, and sit awhile!
I dig the RED phone.
The Up House Kitchen was the BOMB! I absolutely drooled over the white, turquoise and red. The beautiful wide red oak floors, white framed cabinets with stainless steel pulls, white shiny subway tiles with black and white accents created a dreamy, retro look.
The turquoise appliances could not have been more fun and whimsical.
The unfilled nursery was thought provoking. Sometimes our dreams don't come true!

Disney's Pixar Up House
One of the all-time funnest, most creative houses I have ever toured in a home show was the Disney Pixar Up House. There are few words to adequately describe the magic, details, and heart that went into this architecture and design.
Is this home dreamy or what?
Don't you just love the details that went into this home? The mail box alone was just so darn fun and touching. I actually teared up over this one. The relationship between Cark and Ellie was so sweet!
Carl and Ellie watched out for each other through thick and thin! They were truly each others best friend. The way the movie, UP, depicted this marriage relationship was very heart warming.
I burst out laughing when I saw the boy scout pack all loaded and ready for ADVENTURE!
This man did a wonderful job as Carl and made for a perfect photo op.

Watermelon Salad
This is an amazing salad. I love the blend of flavors and textures.
4 cups red leaf lettuce, washed and broken into large pieces
16 large 1 1/2 pieces of seedless watermelon
1 small red onion, thinly sliced
1 red pepper, chopped into medium chunks
4 oz. seedless (English) cucumber, sliced and cut into half moons
1/2 cup crumbled goat cheese
1/2 cup candied almonds (see directions below)
Divide ingredients among four serving plates and drizzle with vinaigrette dressing.
Vinaigrette Dressing
1 tablespoon red wine vinegar
2 teaspoons Dijon mustard
2 teaspoons fresh lemon juice
3 tablespoons olive oil
1 tablespoon fresh orange juice
1 teaspoon honey
salt to taste
1. Blend above ingredients.
Candied Almonds
1/2 cup slivered almonds
1 Tbls. granulated sugar
1. In small pan over medium heat, add almonds and sugar.
2. Cook until sugar is melted stirring to coat almonds.
3. Remove to plate to cool.

Pre-Emergency Preparedness
Family Pre-Disaster Evacuation Plan
Preparation is the key to your family’s success in an emergency. Your pre-disaster plan can help reduce the stress and anxiety of an emergency situation, especially for your children. This guide will help you develop a plan which will enable you to survive a variety of disaster situations. Remember to re-evaluate your disaster plan annually with your family.
1. Before the Disaster:
A: Prepare your 72 hour kits and have them readily accessible.
B: Know how to shut off all utilities–gas, water, and electricity.
C. Learn basic first aid skills and CPR.
D. Have a family picture in your 72 hour kit with complete descriptions on the back of each family member including height, weight, eyes, etc.
E. Have a copy of important records in your 72 hour kit. (Try to have another copy at a location outside of your home as well.)
F. Plan an evacuation route to get out of your house, and have a meeting place outside of your home that is away from power lines, trees, etc.
G. Draw a map of your house. Outline an escape route for all members of your family.
