Watermelon Salad

This is an amazing salad. I love the blend of flavors and textures.

4 cups red leaf lettuce, washed and broken into large pieces
16 large 1 1/2 pieces of seedless watermelon
1 small red onion, thinly sliced
1 red pepper, chopped into medium chunks
4 oz. seedless (English) cucumber, sliced and cut into half moons
1/2 cup crumbled goat cheese
1/2 cup candied almonds (see directions below)

Divide ingredients among four serving plates and drizzle with vinaigrette dressing. 

Vinaigrette Dressing

1 tablespoon red wine vinegar
2 teaspoons Dijon mustard
2 teaspoons fresh lemon juice
3 tablespoons olive oil
1 tablespoon fresh orange juice
1 teaspoon honey
salt to taste

1. Blend above ingredients.

Candied Almonds

1/2 cup slivered almonds
1 Tbls. granulated sugar

1. In small pan over medium heat, add almonds and sugar.
2. Cook until sugar is melted stirring to coat almonds.
3. Remove to plate to cool.
