Won Ton Chicken Salad



1 head green leaf lettuce, washed, dried and cut into bite size
3 cups cooked chicken shredded or cubed
1 cup red onions, thinly sliced
1 cup green pepper, chopped
1/2 cup fried bean threads
2 cups fried wontons
2 tablespoons sesame seeds
1/2 cup raw slivered almonds
1 cup sesame dressing
 canola oil for frying wontons and bean threads 

1. In large salad bowl, combine all ingredients except fried wontons adding dressing last.
2. Right before serving, add fried wontons to salad. 

To make fried wontons and bean threads:

1. Heat 2 inches of canola oil in a medium sauce pan to 375 degrees.
2. Cut 1 cup wonton wrappers into four strips about a half inch in width using a pizza cutter.
3. Toss strips of wontons into hot oil until they bubble and turn golden brown. This takes about 1 minute. 
4. Using tongs remove wontons from oil and let drain on paper towels. 
5. When cooking bean threads, follow directions above. Cook 1 cup of bean threads at a time in hot oil. Bean threads will puff. This takes about 1 minute. Make sure oil is 375 degrees before cooking wontons and bean threads.

Dressing:
1/2 cup extra virgin olive oil
1/3 cup rice vinegar
1/4 cup granulated sugar
1 tablespoon light soy sauce
1 tablespoon sesame oil
2 cloves garlic, minced

Directions

1. Place all ingredients in a quart jar with lid and shake to combine.

This is a lovely sweet and savory salad with Asian flavors. My daughter had this for breakfast and swooned. She said, "this is the best salad I have ever tasted." Every home cook should have a delicious Won Ton Salad recipe in her repertoire.
