Twice Baked Potatoes

4 baking potatoes
3 tablespoons butter
1/2 cup sour cream
1/2 cup cheddar, shredded
4 pieces bacon, cooked crisp and crumbled
1/8 cup green onions, chopped
1/4 teaspoon salt
1/4 teaspoon cracked pepper

1. Bake washed potatoes in 400 degree oven for 60 minutes.
2. Let cool slightly. Cut in half and scoop out flesh leaving 1/8" of potato.
3. In medium bowl, combine potato, butter, and sour cream until smooth.
4. Fold bacon, green onions, salt and pepper into potato mixture.
5. Spoon potato mixture into potato shells and bake in 350 degree oven for 20 minutes more.

Twice Baked Potatoes are savory and scrumptious. They are especially good with mini meatballs or BBQ pork ribs.
