Two-Bean Chili



1/2 cup onion
2 cloves garlic, minced
1 Tbls. Canola oil
1 lb. lean ground beef
1 (28 oz.) can stewed tomatoes
1 (15 oz.) can pinto beans
1 (15 oz.) can kidney beans
1 (7 oz.) can tomato sauce
1 Tbls. chili powder
1/2 Tbls. cumin
1/4 tsp. salt
1/4 tsp. pepper

1. In a skillet, heat oil over medium heat. Add onion and garlic and cook until tender, about 4 minutes.
2. Add beef and cook until browned.
3. Transfer beef mixture to large stock pot. Add tomatoes, beans, and tomato sauce.
4. Add seasonings and simmer on low heat for 20 minutes.
5. Serve with saltine crackers and sour cream.

Chili is one of my favorite fall foods. It is quick, comforting, tasty, and healthy. This is one of our game day recipes. If you are like us, then game day is hectic, but wonderful. It calls for nutritious, hardy food to sustain us during cool fall football games.
