Bananas Foster French Toast


Most of us think of Bananas Foster as a delicious dessert, but it makes a suiting and scrumptious French Toast topping as well. With the holidays upon us and kids soon out for Christmas break, home cooked breakfasts makes the season special and memorable. The bananas caramelize and the light real maple syrup is a lovely complementary flavor.

5 eggs
2/3 cups whole milk
2 Tbls. orange juice
2 tsp. cinnamon
8 sliced whole wheat bread

Topping
2 large bananas, sliced
1 Tbls. butter
2 Tbls. brown sugar
butter for cooking
real maple syrup

1. In a shallow bowl, combine eggs, milk, orange juice, and cinnamon.
2. In a large skillet or griddle, heat 1 tablespoon of butter on medium heat.
3. Dip 4 slices of bread in French toast mix, coating each side and place on hot griddle.
4. Brown on each side turning once, about 6 to 7 minutes. Remove to plate and cover to keep warm.
5. In same skillet, heat butter until melted and add brown sugar. Cook until sugar is dissolved.
6. Add bananas and cook until slightly golden brown. Spoon 1/4 cup of banana topping over each French toast slice and top with syrup.

Serves 8
