Chinese Chicken Noodle Soup


Chicken Noodle Soup is a recipe found in many different cultures with their own unique and wonderful variation of flavors and ingredients. This Chicken Noodle Soup incorporates the three main ingredients most often used in the Orient including ginger, garlic, and green onions. It is lite and with a lovely savory flavor.

6 oz. rice noodles
1 Tbls. peanut oil
1/2 Tbls. fresh ginger, finely grated
2 cloves garlic, minced
2 (15 oz.) cans chicken broth
1 Tbls. soy sauce
1/2 Tbls. red chili sauce
2 cups cooked chicken, shredded
2 green onions, thinly sliced
1/2 tsp. black pepper
2 cups baby spinach, washed and dried

1. In a large stock pot, heat oil, garlic, and ginger over medium heat until tender, about 1 minute.
2. Add chicken broth, soy sauce, chili sauce, and green onions. Bring to a boil.
3. Turn heat to medium low. Add noodles and cook until tender, about 5 minutes.
4. Add chicken and pepper. Simmer for 3 minutes.
5. Just before serving, add spinach.
